In the 19th century, you could hear people shouting in the streets: "Here's the fun, ladies, here's the fun!"
We called these pleasures, the Forgotten because they are so light, that a moment after eating them, you don't remember them, you forget them.
They were usually eaten during the carnival, in the middle of winter. Pleasure seekers would carry their baskets on their backs, filled with these cookies. These pleasures have survived through the centuries and the merchants developed an increasingly refined recipe that gave even more taste to these delicacies.
Hence these pretty Escalettes with their fragrant notes and baked in their atypically aesthetic cast iron mould. The Escalettes, from the waffle family, come from the Montpellier region and represent our passion for ancestral manufacturing methods, a lot of love, intransigence on the quality of the products but above all a family recipe handed down for 5 generations.
