When he created the Domaine l'Hermas in 2004, he set out in search of a specific terroir. He was looking for scrublands at altitude, with northern exposure, around the family property. This "Hermas" (abandoned land in Occitan) was finally unearthed, he cleared it and planted Syrah and Mourvèdre. The estate now covers about ten hectares.
After six long years of waiting and work, the first vintage arrives in 2009: elegant, fresh and expressing all the minerality of the Terrasses du Larzac terroir. The wager is successful. The adventure begins...
Trained as an oenologist, but above all not a winemaker, Matthieu now vinifies two vintages: Hermas Blanc and Hermas Rouge. The greatest starred wines in France display them on their wine list.
